The open kitchen was a vital design element, with chefs on view cooking freshly made gourmet burgers. Cow hide barstools, organic Lotus pendant lights and Tasmanian Oak cladding create a warm earthy ambience. For clients who enjoy a glass of wine with their meal, a licensed section with table service enhances the dine-in experience. The Norths knew they were onto a winner, when the opening day had them selling over 600 burgers.

The Quarter Twenty One Cookery School is fully equipped with state of the art equipment, including ovens and cooktops by Fagor with the latest appliances. It can accommodate intimate classes for groups of twelve. A cleverly positioned camera connected to the LED screen, provides a birds eye view of the demonstration table. Glass walls enable the school to be viewed by shoppers, and a stunning wall of herbs and spices serves as a vibrant backdrop.

The restaurant starts at the source, with a focus on sustainability and ethical farming. The interior has a dark ambience, with a full height rustic wine display and a pressed metal ceiling. Custom designed pendant lights by lighting designer Tim Barry, are scattered across the ceiling, creating tonal shades of copper, adding warmth and accentuating the bronze hand printed wallpaper and Spotted Gum timber walls.

Within Quarter Twenty One is a high caliber food providore with a select range of quality wines, premium ingredients and ready-made gourmet meals for cooks on the run. In the main entrance stands two refrigerated displays showcasing carcasses and cold cooked meats. The Travertine walls and Spotted Gum timber floors add warmth, and floor to ceiling wine racks stand proud in the main window. The locally sourced goods are effortlessly displayed on stone and timber tables.

The 20 metre long entrance corridor to Bécasse creates a magical ‘Alice in Wonderland’ experience, decorated with a handmade arbor of foliage changing colours to echo the seasons. Heritage Sandstone walls and arched windows create a distinctive feature within the intimate Bécasse dining room. Oval dining tables covered in Ostrich leather are hugged by curved banquettes. A unique artwork by Studio Ham celebrating taste buds with peep holes that look into the chef’s table. The elegant private dining room, perfect for special events has a playful light installation by lighting designer Tim Barry.

It took four years of design development and construction, before Parisi's Food Hall opened to the public. Hills Thallis Architects created the purpose built, modern building on Dover Street accommodating 1326sqm over three floors. Mima Design were responsible for all interior aspects covering retail and extensive back-of-house areas for refrigeration, cutting room, kitchen, storage and staff. As a high end premium destination for groceries, the interior design needed to reflect the high standard expected from Rose Bay locals.

Tokyo Ramen was developed for implementation into Westfield Parramatta, based on an existing successful store concept designed for Westfield Hornsby. This design is loosely based on modern Tokyo meets traditional Japan. The budget was tight, so low cost materials were used throughout, with minimal degradation of intended brand values. This restaurant prepares and cooks food for dine-in customers, but also displays take-away food at the shopfront.

Bécasse Bakery has a mouth watering patisserie selection, showcased on stone bench tops under glass cabinets. A viewing window gives an insight into the daily life of a baker, as customers enjoy a fresh coffee and croissant seated at the stone counter. The commercial bakery is kept busy producing fresh bread for Charlie &#38; Co. Burgers and Bécasse Bakery at the Opera Kitchen, it also supplies Justin’s three restaurants Etch, Bécasse, and Quarter Twenty One, his Le Grand Cafe in Clarence Street, in addition to select city restaurants.

Arriving at our office with the name 'Wrapalicious' and a menu scribbled on a note pad, we transformed his vision into reality within a tight budget. Our combined aim was to establish a food court tenancy that looked and operated as though it was one of the 'big boys'. A simple wrap offer was established, the point of difference being customisation at a set price. Development of the menu was kept simple to ensure easy selection by customers.
